Ingredients:
Cookie Layer
- 1 1/2 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp salt
- 1/2 cup soft brown sugar
- 1/3 cup caster sugar
- 1 tsp instant coffee
- 1 egg + 1 egg yolk
- 2 stick butter (200g)
- 1/2 cup milk chocolate
- 1/2 cup dark chocolate
Instructions:
- In a pot over low heat make the brown butter, keep it over the heat for 5-8 minutes
- In a stand mixer, add both sugars, instant coffee, the brown butter and mix until combined
- Add the eggs and continue mixing until combined
- Add the flour, baking soda and baking powder gradually and mix on low
- Using the spatula add the chocolate and fold everything together
- Flatten the cookie dough in the baking pan
Brownie layer
- 226 g semi-sweet chocolate
- 150 g butter
- 1 tsp instant coffee
- 3/4 cup sugar
- 3 eggs
- 2 tsp vanilla extract or vanilla bean paste
- 3/4 cup flour
- 3 tbsp cacao powder
- 1/2 tsp salt
- 1/2 cup semi-sweet chocolate chips
Instructions:
- Preheat oven to 190C or 375f
- Line a 8 inch square Baking pan with parchment paper.
- Melt the chocolate, butter and coffee on the stove in a double boiler.
- In the stand mixer’s bowl add eggs, sugar and vanilla and mix for 2-3 minutes until the mixture becomes fluffy and light in color.
- After the melted chocolate has cooled, pour it gradually into the stand mixer and mix until well combined.
- Sift in the flour, cocoa powder and salt.
- Fold in the dry ingredients without over folding.
- Transfer the batter to the baking pan on top of the cookie dough
- Sprinkle with sea salt and to the oven for 21 minutes.
- Take it out of the oven and top it off with mini marshmallows.
- Back in the oven for 3 minutes or until the marshmallows are golden.
- Cool for 15 minutes then slice!
